Stop Filling The Freezer — How The Amish Put Up A Year Of Food In Jars

Go down to my cellar in the dead of winter and the shelves are lined with jars — tomatoes, pickles, fruit, jam — the whole of last summer's garden, kept with no electricity, waiting to feed the family till spring. In this one I teach the safe basics of water-bath canning, so you can put up your own high-acid harvest and fill your own shelves. I'm more careful about safety in this one than almost any other, because canning done wrong can make you truly sick. The trick most people miss — the ONE rule above all: water-bath canning is only safe for HIGH-ACID foods (fruits, jams, pickles, properly acidified tomatoes). Low-acid foods — green beans, corn, plain vegetables, meat — must NEVER be water-bath canned; they need a pressure canner. This is the whole of canning safety. ⚠️ Honest note in the video: botulism is a poison you can't see, smell, or taste, and it's why these rules matter. Always use a tested, trusted recipe and follow it exactly (acid, headspace, processing time). Check every seal; store only sealed jars. When you open a jar, if the lid bulges, the food foams or smells off, or anything looks wrong — DO NOT taste it to check. When in doubt, throw it out.
