Easy Crispy Red Lentil Crackers | High Protein, High Fiber, Oil-Free, Vegan You’ll need: 2 sheet pans, food processor or high-speed blender Ingredients: 1 cup dried red lentils, soaked overnight 4 Tbsp nutritional yeast 4 Tbsp lemon juice 1 tsp garlic powder 1 tsp onion powder ¼ tsp turmeric ½ tsp smoked paprika (to taste) ½ tsp salt (to taste) 3–6 Tbsp water, added gradually Optional topping: your favorite spice blend Method: 1. Soak: Cover red lentils with water and soak overnight. Drain and rinse well. 2. Blend: Add lentils, nutritional yeast, lemon juice, spices, salt, and 3 Tbsp water to a food processor or high-speed blender. Blend, adding water 1 Tbsp at a time until thick but pourable. Adjust seasoning. 3. Spread: Line 2 baking sheets with parchment. Spread batter thin (between ⅛–¼ inch). Add optional spice topping. 4. Bake: Bake at 350°F (180°C) for 10 minutes.
