Dry Ingredients 1/2 cup oat flour (60 g) 1/4 cup sweet cassava starch (30 g) A pinch of salt (approximately 1/4 teaspoon) 1/2 tablespoon chia seeds (5 g – optional) 1/2 teaspoon baking powder (2.5 g) Wet Ingredients 1 egg 2 tablespoons water (30 ml) Topping 1 tablespoon sunflower seeds (10 g – optional) How to make oat bread in a pan Grease a small, non-stick 13 cm pan with a little oil and add the sunflower seeds. In a bowl or shallow dish, mix all the dry ingredients with a fork, except for the baking powder. Make a well in the center and add the egg and water. Mix well with the fork, starting from the center and then incorporating the flours, until you have a smooth, homogeneous dough. Finally, add the baking powder, mix quickly, and transfer the batter to the pan. Place the covered pan on a wire rack or over very low heat and cook for 10 to 12 minutes. Using a spatula, flip the bread and cook for another 3 minutes, still covered. Remove the bread from the pan and let it cool on a wire rack or a plate lined with paper towels. Slice with a serrated knife.
