Old-Fashioned Oatmeal Cake - Just in Time for the Fall Holiday Season! Subscriber Sunday # 87

Old-Fashioned Oatmeal Cake 1 1/2 cups boiling water 1 cup quick oats 1 cup packed brown sugar 1 cup granulated sugar 1 stick butter, softened 2 eggs 1 1/2 cups flour 1 teaspoon cinnamon 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon vanilla ICING: 6 Tablespoons butter 1/2 cup powdered sugar 1/2 cup evaporated milk 1/2 cup sweetened coconut flakes 1/2 cup pecans Preheat oven to 350°. Boil the water. Once it has started boiling, add the oats and allow to stand while you get the other ingredients together. Do not let the oatmeal sit for too long or the cake will not be as moist. Cream together the brown sugar, the granulated sugar, butter, and eggs. Once this has been mixed well, add the oatmeal mixture. Then add the flour, soda, salt, cinnamon, and vanilla. Mix well. Pour into a prepared 9“ x 13“ pan. Bake for 40 minutes. After the cake has baked, make the icing by placing the 6 Tablespoons of butter, 1/2 cup powdered sugar, the evaporated milk, coconut, and pecans into a saucepan and cook over low heat until the mixture boils a couple minutes and is slightly thickened.
