Boulgour aux blettes à l'Arménienne

Here's a simple and healthy way to cook Swiss chard with this recipe I got from my Armenian grandmother! Ideal as a side dish for all your meals, this Swiss chard bulgur can be prepared in advance and keeps for 24 hours in the refrigerator. Ingredients for 4 people: 1 bunch of Swiss chard (about a dozen stalks) 100g fine bulgur wheat 2 tbsp tomato paste 4 tbsp rapeseed (or olive) oil salt chili flakes Preparation: 1/ In a wide bowl, pour the bulgur wheat, season with salt and chili flakes, and drizzle with rapeseed oil. Mix well. Pour over the bulgur wheat the same amount of boiling water in which you have dissolved 2 tbsp of tomato paste. Mix and let it soak for at least 10 minutes. 2/ Separate the stalks from the leaves. 3/ Finely dice the ribs, as you would onions, and place them in a pan. Add water almost to cover and cook over high heat for 10 minutes. Once the water has completely evaporated, add the 4 tablespoons of oil and season with salt and chili pepper to taste. 4/ Add the chard leaves, chopped as finely as parsley, to the pan, cover, and cook for 5 minutes. 5/ Finally, add the bulgur, mix everything thoroughly, and cook over low heat for 5 minutes before serving hot or warm.
