I have been searching for a long time for the exact formula for truly airy and light spelt rolls. After countless attempts in the kitchen, I am excited to share with you the winning combination and the unique technique that turns these rolls into real clouds. ​These rolls are an amazing alternative to store-bought pastries - they are egg-free, white sugar-free and preservative-free. They are clean, healthy and inexplicably delicious! Ingredients (for 18 rolls): ​(I used universal measuring spoons) ​For the starter dough ​2¾ cups warm water (not too hot!) ​2.5 tablespoons sugar-free silane ​2 tablespoons dry yeast ​Flours: ​500 grams whole spelt flour ​500 grams 80% wheat flour ​For the rest of the kneading: ​1 tablespoon salt ​1/4 cup oil ​For the coating mixture: ​1/2 cup fine oats ​1/2 cup whole sesame seeds ​1/3 cup chia ​1/3 cup flax seeds ​1/2 cup chia seeds ​For the dipping solution: ​1 cup water ​1.5 teaspoons sugar-free silane ​Preparation steps: ​Preparation of the starter: In the mixer bowl, mix the warm water, silane, and yeast. Wait a few minutes until small bubbles appear, indicating fermentation. ​Adding flours and kneading: Add the wholemeal spelt flour and wheat flour (80%). Knead at low speed until combined. Add the salt and oil and continue kneading for a full 10 minutes (if there is not enough water, you can add a tablespoon or two). The resulting dough will be slightly sticky. ​First rise: Shape into a ball and place in a covered bowl until doubled in size. It is important not to shorten the rise time to obtain maximum airiness. ​Dividing into balls: Reduce the volume of the dough and divide into 18 equal balls (about 96 grams per ball, or according to your eye). Cover the balls of dough so that they do not dry out. ​Rounding and initial shaping: Round each ball by bringing the edges into the center and pressing them together, until you obtain a smooth and uniform ball. ​Shaping the rolls: Roll each ball into a rectangle. Roll inward from the side closest to us tightly, and finally tighten the edge of the dough (the seam) all the way to prevent it from opening in the oven. Roll slightly on the surface to obtain the desired length. ​Topping: Mix the seed mixture ingredients. Dip each roll in the water and silane solution and then roll in the seed mixture until fully coated. ​Second rising and baking: Place on a tray with baking paper for another rising until doubled in volume.
