Here's what you'll need: For the CAKE: 1.5 cups sugar (300g) 2 large eggs 1/2 cup oil (125ml) 1/3 cup yogurt (90g) 2/3 cup milk (165ml) 2 tsp vanilla (10ml) 2 cups all purpose flour(250) 1 cup pure cocoa powder (90g) 2 tsp baking powder (8g) 1 tsp baking soda (4g) 1 tsp salt (5g) 1 tbsp instant coffee (7g) 1 cup hot water (250ml) For the Feuilletine Flakes: 60 grams salted butter 60 grams powdered sugar 60 grams egg whites 1/2 tsp vanilla extract 60 grams flour For the ganache: 1.5 cups semi sweet chocolate 1 cup hot cream 1. Preheat oven at 170ºC or 340ºF. In a bowl, mix together sugar, eggs and oil. Add yogurt, milk and vanilla. 2. Sift in flour, cocoa powder, baking powder, baking soda and salt. Mix well. 3. In a glass, mix instant coffee and hot water. Pour into the batter. Mix. 4. Grease a 9x9 inches baking dish or pan and line with parchment paper. Pour the batter. 5. Bake for 25-30 minutes or until toothpick comes out clean when inserted. 6. Let it cool down and trim the dome to level the cake OR not, you can totally leave it :) 7. For the feuilletine flakes, beat butter and powdered sugar until smooth. Add egg whites and vanilla. Mix well. Add flour and mix until smooth. 8. Spread feuilletine batter in a large sheet pan, lined with parchment paper. Spread evenly and thinly. Bake at 160c or 320F for 7 to 10 minutes or until golden. Let it cool then crush into flakes. 9. For the ganache: Mix semi sweet chocolate and hot cream, stir until chocolate is totally melted. 10. Add about 1/2 cup ganache on the feuilletine flakes then mix. 11. Pour over the remaining ganache on the cooled and leveled chocolate cake, top with ganache covered feuilletine flakes. 12. Chill in the fridge or you can serve it right away.
