Passion Fruit Peel Flour (Full Use) Nothing is lost, everything is used! Learn the complete step-by-step process to transform passion fruit peels into a nutritious and versatile flour that disappears during preparation but remains present in its benefits. 🧾 Ingredients 4 to 6 ripe yellow passion fruit peels (preferably organic) 1 tablespoon of baking soda (for sanitizing) Water for sanitizing and cooking 👩🍳 Preparation method 1. Sanitize the peels Wash well under running water, scrubbing with a small brush. 1. Soak for 15 minutes in water with baking soda. Rinse well. 2. Cook Cut the peels into smaller pieces, cover with water in a saucepan and bring to a boil. After boiling, cook for 15 minutes. 3. Discard the cooking water This is the detail that most people skip at home, and it's precisely what makes the preparation safe and correct. 4. Dehydrate Spread the peels on a baking sheet, without overlapping. Bake in the oven at the lowest possible temperature (50°C to 60°C) for 3 to 4 hours, turning halfway through. The goal is to dry, not bake. It can also be done in an air fryer or dehydrator (it takes a little longer). 5. Grind and sift Grind the dried peels in a blender or food processor until they become flour. Pass through a sieve for a fine and uniform texture. 6. Storage Store in a tightly sealed glass jar in a cool, dry place away from sunlight. Lasts up to 30 days. How to use Add to oatmeal, tapioca, dinner broth, or farofa (Brazilian toasted cassava flour dish). Ingredients 3 tablespoons passion fruit flour 3 tablespoons toasted cassava flour 1 tablespoon extra virgin olive oil ½ finely chopped onion 2 grated garlic cloves Salt to taste Chopped fresh parsley or chives Preparation Method 1. Sauté the garlic and onion In a frying pan, sauté the garlic in olive oil. Then, add the onion and sauté until fragrant. 2. Toast the cassava flour Add the cassava flour and stir well for about 2 minutes, allowing it to incorporate the flavors of the sautéed ingredients. Turn off the heat. 3. Add the passion fruit flour With the heat off, incorporate the passion fruit flour and stir well until completely mixed. (Turning off the heat preserves the properties of both ingredients as much as possible.) 4. Finish Season with parsley or chives and adjust the salt. Done. It's great with Rice, beans, roasted vegetables, or in farofa with zucchini, carrots, or green beans.
