New life & Jerusalem Artichoke Soup - Homestead Diary

It’s Easter at our little off-grid homestead in Norway. We’re preparing and waiting for lambs, planting mustard sprouts, and harvesting Jerusalem artichokes. It’s a time of night watches, and finally, on Easter Sunday, the first two lambs are born. Søren makes a delicious Jerusalem artichoke soup that I’m served while I watch to see if the lambs manage to nurse. Talk about feeling like the luckiest homesteader in the world. 😊❤️ Sheep, humans, and our White German Shepherd all watch eagerly as the little ones look outside for the first time.
