Thank you so much for your support, I appreciate you! đđž Pumpkin Seed Tofu -    â˘Â How-To Make the EASIEST SOY-FREE TOFU - ON...  Mung Bean Tofu -    â˘Â Mung-Fu: Easy 2 Ingredient SOY-FREE TOFU  TOFU RECIPE: 500 grams of organic dry soya beans ( about 2 1/2 cups) 10 cups of water 3-4 tbsp lemon juice 1 cup water This makes one large or two smaller bricks of tofu, you can half the recipe if desired. Instructions: Soak the soya beans in plenty of water for at least 8 hours. Drain and rinse. Combine your soaked beans with the water in a high-speed blender (this may need to be done in 2 batches) Blend until completely smooth. Add the blended mixture to a nut-milk bag and strain all of the liquid into a heavy bottom pot. The pulp should be dry and the consistency of playdoh when you have removed enough liquid. Line a tofu press with very fine cheesecloth. Combine the lemon juice and water and set aside. Bring the soya milk to a soft boil, consistently stirring with a flat bottom spatula to avoid it sticking to the bottom of the pot. Continue to simmer for 10-15 minutes, stirring constantly to prevent scorching. Soya milk can produce a fair amount of foam as it boils, so keep an eye on the pot and skim the foam as necessary. Turn off the stove, and remove the pot from the heat. Next, add the lemon and water mixture and stir. Cover and allow to curdle (15 - 20 minutes). The milk is fully curdled when the liquid is no longer cloudy. If you've added all of the lemon mixture and the liquid is still cloud. Reheat the liquid and repeat the curdling process by adding more lemon mixture and allowing it to curdle. Using a skimmer or spoon with holes, remove curds, and add to the lined tofu press. Fold cheesecloth neatly around bean curds, and press firmly to remove liquid. Continue letting the tofu press in fridge overnight or until it is your desired firmness. Enjoy in recipes that use tofu.
