Interview at Lo Valledor What was once considered waste at the Lo Valledor Wholesale Market is now being transformed into food innovation and social aid. Through the "Soup Project," surplus fruits and vegetables are being converted into dehydrated soups, sauces, and other products distributed free of charge to community organizations. This initiative combines a circular economy, food waste reduction, and support for thousands of people. To learn more about this project, we spoke with Hugo Espinoza, Executive Director of the Lo Valledor Wholesale Market Food Bank Foundation.
