In a separate bowl, beat the egg whites with the remaining sugar until stiff peaks form. Carefully fold the beaten egg whites into the yolk mixture, being careful not to deflate the mixture. Heat a non-stick frying pan over very low heat with a little butter or oil. Make small pancakes using a spoon or piping bag. Fill with your preferred filling. Keep the pan covered, over very low heat, and cook on both sides for about 3 to 5 minutes.
