NY Cookie Recipe For the base dough: 700 g. 113 g unsalted butter 113 g brown sugar 100 g white sugar 295 g all-purpose flour 1 teaspoon vanilla 5 g fine salt 6 g baking powder 6 g baking soda 1/2 teaspoon ground cinnamon 2 cold eggs Toppings for the 3 flavors 🍪 First flavor: double chocolate pecans 230 g. 40 g chopped pecans or toasted walnuts 40 g dark chocolate 40 g milk chocolate (Save a little for decoration). 🍪 Second flavor: 3 chocolates + marshmallows 30 g white chocolate 30 g dark chocolate 20 g milk chocolate 🍪 Third flavor: red velvet 1 teaspoon cocoa powder (alkaline) 6 drops of red food coloring 20 g dark chocolate 40 g white chocolate Total: 9 cookies of approximately 110 g each. Procedure Beat the room temperature butter in a bowl with both sugars, salt, baking soda, baking powder, vanilla, and cinnamon until creamy (don't forget to scrape the edges to incorporate all the dough). You should beat for about 10 minutes before adding the eggs. After this time, add the eggs one by one, beating each for 1 minute, and after adding both eggs, beat for one more minute. In total, you will beat for approximately 12 to 15 minutes. Then add the flour and mix with a spatula just until combined. This will be the base for the cookies. Then cover with plastic wrap and refrigerate for about 20 minutes. After the time is up, remove from the fridge and cut into three equal parts (approximately 230 g each), then you can add your preferred filling. ⚠️ Next, place the cookies in the freezer for at least six hours or until they are hard as a rock; this step is important for the cookies to be thick. Baking: ⚠️ It is important to preheat the oven for at least 20 minutes before baking the cookies. Take the cookies out of the freezer and let them rest outside for 15 minutes, then bake at 180 °C for approximately 20/23 minutes. Heat from above and below + fan. Once the cookies are baked, remove them immediately and let them cool on a rack. While they are still warm, decorate them, and you're done! ✅ You can store the dough for at least three months in the freezer.
