Have a wonderful day! 👉 INGREDIENTS 🧄 3 or 4 cloves of garlic 🌾 a few strands of saffron 🥓 300 g of pancetta 🧂 Salt to taste 🌶️ 3 heaped teaspoons of paprika 🌶️ 3 or 4 dried red peppers (choricero peppers) 🧴 a generous drizzle of olive oil 🥔 2 kg of potatoes 🌶️ optional: a little hot paprika 👉 STEP BY STEP 1️⃣ Peel, wash, and cut the potatoes into small pieces. 2️⃣ Boil the potatoes in salted water until tender. 3️⃣ In a frying pan, fry the bacon and dried red peppers in olive oil; remove them and reserve the oil. 4️⃣ In a mortar, crush the garlic with a little salt and add the saffron. 5️⃣ Add the drained potatoes and continue crushing while adding 2 or 3 cups of the cooking water, depending on whether you prefer a thicker or thinner consistency. 6️⃣ Heat the reserved oil, add the paprika over very low heat, stir briefly without letting it burn, add the crushed garlic and saffron mixture, mix well, taste for salt, and serve with the bacon and peppers. 👉 PERSONAL TIP Don't add the paprika over high heat because it will turn bitter in seconds.
