Support the channel and get Recipe PDFs, Early access to my youtube videos and more on Patreon. / earthygoodnesskitchen 💚 Savoury sweet potato waffles Makes 8-10 Waffles Ingredients: 200g roast sweet potato, flesh only 200ml soy milk 20g ground flax seed 60g water 1 tbsp lime juice 120g gluten free flour (regular will work too) 40g cornflour ½ tsp baking soda 1 tsp baking powder 2 tsp cumin ½ tsp turmeric 1 tsp ground coriander ½ tsp smoked paprika 2 tbsp fresh coriander, finely chopped Method: In a small jug or bowl combine the soy milk with the lime juice and leave to curdle. This creates a plant-based alternative to buttermilk. In another small jug or bowl combine the flax seed and water and leave to turn into a thick gel. (Flax egg) In a small bowl mash the sweet potato into a puree. In a large bowl whisk together all the other ingredients until well combined. Add the sweet potato followed by the liquids, season with salt and pepper and stir until combined. Do not overmix or the waffles will be tough. Preheat your waffle iron, once hot brush with olive oil then dollop in your waffle mix, about 2-3 tbsp of mix per waffle. Cook for 5-6 minutes or until crispy and golden. Transfer to a cooling rack. Waffles can be frozen or kept in an air tight container in the fridge. You can then use an air fryer or toaster to reheat them.
