Creamy Cheesy Pumpkin Omelet | Easy & Healthy Breakfast Recipe

Ingredients Eggs – 7 Cheese – ½ cup Cream – ½ Pumpkin – 1 small size (250 grams) (grated) Onion – 1 small size – (finely chopped) Tomatoes – 3 medium size (cut in round slices) Garlic – 3 cloves (finely chopped) Coriander leaves – ½ cup Salt – 1 tsp Black pepper powder – 1 tsp Thime – 1 tsp Oregano – Garnish (sprinkle on top of omelet) Oil – 5 to 6 tbs Recipe In a glass bowl break and beat the 7 eggs as shown. Then add cream to the bowl and whisk it to mix. Then add finely chopped garlic into the bowl and whisk and mix. Then add grated pumpkin into the bowl and whisk to mix. Then add salt and mix. Then add finely chopped onions and mix it too. Then add coriander leaves and mix. Then add thyme and black pepper powder and whisk to mix. Your egg and pumpkin batter is ready to be used later. Now heat a pan on medium to high flame and add oil into it to heat up. Then put the sliced tomatoes on it and fry from both sides. Then pour the egg and pumpkin batter you made earlier on top of the tomatoes fully covering them. Cover the pan with the lid and cook on low to medium flame for it to cook nicely without getting burned. Now after 5 to 6 mins open the lid one side is cooked. Now flip the side so that the upper side can also be cooked as shown in the video. Put the grated cheese on top as shown and close the lid for the cheese to melt and the lower side to cook as well. Now after another 5 to 6 mins open the lid and you will see cheese melted and the whole omelet cooked. Sprinkle some oregano and its ready dish it out on a plate. Make the second one too in the same way as shown in the video. Your yummy omelet is ready to devour. Enjoy.
