Learn how to make this quick and easy Closed Esfiha recipe with 100% whole wheat dough that's VERY fluffy and delicious, with a moist and succulent meat filling. This recipe from my mother makes a LOT of money and makes an incredible, fluffy dough that's great for selling! Esfiha is a baked stuffed bread originally from Syria and Lebanon, and found in other Middle Eastern countries, such as Jordan, Palestine, and Iraq, as well as Brazil and Argentina, where it was brought by Syrian and Lebanese immigrants and became extremely popular. There are several esfiha recipes. The one I'm teaching is a family recipe, and my mother sold a lot of it to raise her four children. This esfiha dough is super fluffy and very tasty because it's seasoned, which makes all the difference. ♥ INGREDIENTS ♥ DOUGH: 240ml Milk 50ml Melted Oil 10g Dry Yeast 1 Tablespoon Sugar 1 Egg + 1 Egg Yolk ½ Tablespoon Salt ¼ Onion 2 Cloves Garlic 500g Whole Wheat Flour Yolk (for brushing) FILLING: 400g Ground Beef 1 Small Tomato, chopped 4 Tablespoons Onion Juice of 1 Lemon ½ teaspoon Ground Cumin ½ teaspoon Salt or - ½ teaspoon Salt 1 Pinch Cayenne Pepper 1 Tablespoon Olive Oil Parsley (to taste) ♥ IMPORTANT ♥ FILLING: Any filling is valid! But never add hot or very wet filling! DON'T TAKE IT OUT: For the love of God!!! Don't remove the onion and garlic from the dough; that's what makes this dough so flavorful, and the acidity of the onion is what makes it so light and fluffy! STORAGE: Refrigerate and consume within 10 days. If desired, freeze for up to 3 months after baking.
