Among the typical second courses of Lazio cuisine there is the ABBACCHIO al forno with POTATOES, a must on the holiday table, especially Christmas and Easter. In the video I show you the procedure that my mother taught me, which is used to cook the meat very well so as to keep it soft and juicy inside and with a perfect browning on the outside. The result will be an incredibly tasty and tender ROAST! You can follow the same recipe even if you want to cook lamb in the oven. As you well know, it is always sheep meat, but from an animal that has already started weaning, unlike lamb (which is fed only milk, and is therefore younger and smaller in size). I'll leave you the written summary here too so you can keep it in mind: 🍖the pieces of meat must be large and only scored, not cut cleanly (I recommend asking your butcher to prepare them for you), they should be seasoned preferably the night before or at least 4-5 hours before, then the meat must be brought back to room temperature before going into the oven. 🔥the oven must be preheated and kept at 220°C in static mode (not less, also because you will open it several times and therefore the temperature will always tend to drop a little) ✔️Bake the meat for 20 minutes, then pour in the wine and cook for another 10 minutes to allow the alcohol to evaporate ✔️remove the lamb, cut it into smaller pieces and turn them into the sauce, then put it back in the oven placing the pan with the potatoes underneath (be sure to cut them into large pieces). ✔️after 20 minutes transfer the potatoes to the pan with the meat then bake again for about 20 minutes to finish cooking.
