Sorrel Leaves (Gongura) Chana Dal Recipe Ingredients: 2 cups sorrel leaves (gongura), washed and chopped ½ cup chana dal (split chickpeas), soaked for 30 minutes 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 2 dried red chilies 2 green chilies, slit 8–10 garlic cloves A pinch of asafoetida (hing) ¼ tsp turmeric powder 1 tsp red chili powder (optional) Salt to taste Fresh coriander leaves for garnish Method: 1. Wash and soak the chana dal for 30 minutes. 2. Pressure cook the chana dal with turmeric and enough water for 2–3 whistles until just tender. Do not overcook. 3. Heat oil in a pan. Add mustard seeds, cumin seeds, dried red chilies, garlic, hing, and green chilies. Sauté until aromatic. 4. Add the chopped sorrel leaves and cook until they wilt and become soft. 5. Add red chili powder (optional) and salt. Mix well. 6. Add the cooked chana dal and stir gently. 7. Cook on low flame for 5–7 minutes so the flavors blend together. 8. Garnish with fresh coriander and serve hot.
