Wash the mutton thoroughly and marinate it with turmeric, salt, and 1 tbsp ginger-garlic paste for 20–30 minutes. 2. Heat oil in a pressure cooker or heavy-bottom pan. Add cumin seeds, bay leaf, cinnamon, cloves, and cardamom. Sauté until fragrant. 3. Add sliced onions and curry leaves. Fry until the onions turn deep golden brown. 4. Add the remaining ginger-garlic paste and green chilies. Cook for 2 minutes until the raw smell disappears. 5. Add chopped tomatoes and cook until soft and the oil starts separating. 6. Mix in red chili powder, coriander powder, cumin powder, and a little water. Cook the masala for 3–4 minutes. 7. Add the marinated mutton and cook on high heat for 8–10 minutes, stirring continuously until the meat is well coated with the masala. 8. Pour enough hot water to cover the mutton. Pressure cook for 5–6 whistles (or simmer in a pot for 60–90 minutes until tender). 9. Once the mutton is cooked, open the lid and simmer for 8–10 minutes until the gravy reaches your desired consistency. 10. Sprinkle garam masala and chopped coriander leaves. Mix well and cook for another minute. 11.
