He is the creator of Fermenta Com Ciência, a company through which he teaches courses, gives lectures, and provides consulting services on Kombucha and other fermented natural probiotics. He is also the creator and organizer of the Brazilian Kombucha Festival. He discovered Kombucha in Australia in 2013, honed his skills, and began working with Kombucha in Brazil in 2015, where he has already trained thousands of "Kombucha enthusiasts" through in-person courses, online courses, and commercial production consulting. He is the President of ABKOM (Brazilian Kombucha Association) and a researcher of the benefits of Kombucha and the optimization of its large-scale production. In addition to his academic training, he studied with some of the biggest international names in fermentation, such as Sandor Katz (Art of Fermentation) and Sebastien Bureau (Mannanova/Rise Kombucha). He participated in the development of several successful national brands such as Vih!, Tchá, Puro Verde, Tribal Tea, Mr. Bolt, Aviv, Kombucha Libre, Lich Kombucha, and MeWe. He has also developed fermenters, equipment, and specific ingredients for Kombucha production with prominent companies.
