Grind the coriander seeds, cumin seeds, fennel seeds, ginger, dry red chillies, bay leaf, star anise, cinnamon, black pepper, and cloves into a smooth spice paste. Heat 1–2 tablespoons of ghee in a heavy-bottomed pot. Fry the badi (sun-dried lentil dumplings) until golden brown. In the same pot, add the soaked black chickpeas and sauté for 2–3 minutes. Add the chopped vegetables and pour in enough hot water to cover them. Add salt, turmeric powder, the prepared spice paste, and jaggery. Mix well. Cover and cook on medium heat until the vegetables and black chickpeas are soft and well cooked. Mahura Bhoga is ready to be offered to Lord Jagannath and served hot.
