After adding the starter (calier - an enzyme that is formed during curdling), the milk must be thoroughly mixed and left to stand for another 30 minutes. ► After 15 minutes, when the milk has already acquired a jelly-like consistency, it is mixed by hand to separate the whey. Do not be embarrassed, this is exactly how real cheese makers do it. After mixing, the mass is pressed by hand so that the whey ends up on top of the barrel and from there it is scooped out using a metal plate. ► In order for the cheese to be prepared faster in cool weather, the barrel is covered with a burka and a raincoat, in warm sunny weather one raincoat is enough. ► And we remind you that cheese in Dagestan is made in the mountains, on the site of summer sheep pastures, so that the milk does not spoil. ► Polypropylene bags are placed on large flat boulders, smoothed by water and glaciers over thousands of years, previously washed by the water of mountain rivers. The bags are moistened with whey, the cheese mass is placed in them, which allows excess whey to seep out. After which the bags are twisted. In them, which will later form cheese heads, weighing about 2 kg. After this, the bags are left on the stones until the next morning. ► A 200-liter barrel of milk will produce about 45 kg of cheese. ► In order for the cheese to be better preserved in the mountains, it is salted, then tied with leaves and bunches of herbs that grow in alpine meadows. Then everything is tied with twine. And left to ripen for another week, while the cheese must be untied and turned over every day. ► After this, the cheese is once again sprinkled with salt, which draws out all the excess moisture over the next 20 days.
