Salame spalmabile , Il Ciauscolo

Hello everyone, today we're going to show you how to make Ciauscolo, a salami from the Umbria-Marche regions, a somewhat special sausage because it's spreadable. A true delicacy for refreshments, aperitifs, and more. Serves 5 kg of meat: 3 kg pancetta (fatty, you can also use rump lard) 1.5 kg pork shoulder (I used coppa, it's perfect) 500 g pork loin 125 g fine salt 5 g ground black pepper 5 cloves garlic 1 glass dry white wine. I used beef hindquarters for the casing, but synthetic casings are also suitable.
