Christmas Scones (makes 10-12) Egg (medium)—1 A. Plain yogurt—100g A. Milk—2 tablespoons Candied cherries—40g Dried cranberries—20g Zest of 1/2 an orange B. Cake flour (preferably fine, type "00")—250g B. Baking powder—1 tablespoon B. Baking soda—1/4 teaspoon B. Pinch of sea salt 2 tablespoons caster sugar 90g unsalted butter (cut into 1cm cubes and refrigerate until ready to use) Clotted cream, brandy butter, your favorite jam, etc. *Preheat the oven to 200°C/180°C fan/Gas Mark 6 before baking. 1. Beat the eggs and set aside 1 tablespoon for the top glaze. Mix the remaining mixture with A. Roughly chop the cherries. 2. Sift B. into a bowl. Add the caster sugar. 3. Rub the cold butter into the dry ingredients (2) with your hands until lightly combined. A few lumps are fine. Grate the orange zest and add the egg mixture (1), chopped cherries, and cranberries, then fold in with a rubber spatula. 4. Place the dough on a floured surface (not included) and roll it out with a rolling pin to a diameter of approximately 20cm (2cm thick). Cut out the dough into your desired shapes (I use a 5.5cm diameter) and arrange them on a parchment-lined baking tray, leaving space between them. 5. Brush 1 tablespoon of the beaten egg (reserved in step 1) onto the surface of the dough with your finger, then bake in a preheated oven for 12 to 15 minutes, until cooked through and the surface is golden brown. 6. Serve freshly baked with your favorite jam or cream. This time, we're serving it with brandy butter and subtly sweetened homemade kissabel apple (a red-fleshed apple) jam.
