Matcha Tiramisu (serves 8) ・Matcha --- 1x3 tablespoons ・Boiling water --- 100x3ml ・Sponge fingers --- 30 (1 pack) ・Mascarpone cheese --- 250g (1 pack) ・Eggs—2 ・Castor sugar --- 100g ・Matcha --- for finishing 1. Mix 1 tablespoon of matcha with 2 tablespoons of boiling water, and when it becomes smooth, mix in the remaining 70ml of boiling water. 2. While the matcha is still hot, soak the sponge fingers in the mixture, being careful not to burn yourself, and arrange 10 pieces one by one in a container. Pour the remaining matcha on top to soak them in. 3. Put the mascarpone in a bowl, add half the caster sugar and one egg yolk at a time, and mix well. 4. Put the egg whites in a separate bowl, add the remaining caster sugar, and beat until stiff peaks form. Add the egg whites (4) to the bowl (3) in 2 or 3 portions and mix evenly. 5.Put 1/3 of the cream (4) on top of the mixture (2) and flatten it with a spoon or spatula. Repeat this 3 times. Slam the bowl to expel any air inside, and sprinkle the matcha over the top through a tea strainer. Chill in the refrigerator for a day. Serve in portions.
