madatha/martha kaja (south indian sweet dish). also called tapeswaram kaja or kakinada kaja. Measurements. Maida (All purpose flour) : 6 cups Butter: 1 Cup (Unsalted Butter) Baking Soda : optional 1 pinch (if you think Maida quality is not of Indian type, use it) Sugar : around 1 Kilogram (you might end up with little left over syrup but it's needed such that Kaja's can get soaked properly) Sugar syrup consistency: 1 thread/string consistency as shown in video.
