INGREDIENTS: Cannelloni pasta Salt Oil Foie gras pâté Garlic Tomato sauce Onion Carrot Minced meat Sherry Flour Butter Nutmeg Starlux (a type of baking powder) Milk Grated cheese PREPARATION: Bring a large pot of water to a boil with salt and a drizzle of oil. Once boiling, add the cannelloni sheets one by one to prevent them from sticking together, stirring gently. Cook for about 15 minutes. Remove from the heat and drain, rinsing the pasta sheets under cold water and draining them well. Lay them out on a clean kitchen towel to fill later. In a frying pan, heat some oil and fry 2 chopped garlic cloves, the diced onion, and the diced carrot. Once fried, add the ground meat and fry thoroughly. Season with salt and add a splash of sherry. Let it cook until the wine has evaporated, then add a splash of tomato sauce. Sauté briefly, then add the pâté and break it up with the rest of the filling. Remove to a plate and let cool. Prepare the béchamel sauce by heating a little oil and a knob of butter in a pan and adding 1 1/2 tablespoons of flour. Sauté it well and gradually add milk, stirring constantly, until you reach the desired consistency. Season with salt, bouillon, and nutmeg.
