Easy Japanese Cold Soba Salad (No Fussy Dressing)
Tonight's Japanese Dinner === DESCRIPTION === A refreshing cold soba salad perfect for warm evenings — colorful diced vegetables, tofu, and crispy luncheon meat scattered "mosaic" style over chilled soba. The seasoning is drizzled straight on at the table, so there's no fussy dressing bowl to wash. ══════════════ 🥗 DUCK & SUMMER VEG MOSAIC SOBA SALAD (TOFU VERSION) ▼ INGREDIENTS (Serves 2) Main • Soba noodles — 2 portions • Luncheon meat (diced 5mm-1cm) — to taste • Tofu (150g, bite-size cubes) — 1 block • Hard-boiled eggs (halved) — 2 Vegetables • Tomato (diced) — 1 • Cucumber (diced) — 1 • Onion (sliced, soaked, squeezed dry) — 1/4 • Shiso leaves (chopped) — to taste Drizzle Per Bowl (per 1 serving) • Extra virgin olive oil — 1/2 tbsp • Mentsuyu (3x concentrate) — 1 to 1.5 tbsp (to taste) ▼ HOW TO MAKE IT 1. Crisp the luncheon meat: Heat a frying pan over medium heat and, without adding oil, stir-fry the diced luncheon meat until the surface is crisp. Turn off the heat and let it cool a little in the pan. 2. Cook & plate the soba: Boil the soba, then shock it in ice water and squeeze out the excess water firmly by hand. Divide fluffily between two bowls. 3. Add onion & diced veg: Spread the squeezed sliced onion over the soba. Scatter the diced tomato, cucumber, tofu (about 75g per serving), and the luncheon meat on top, mixing the colors so they look like a mosaic. 4. Add egg & shiso: Rest a halved boiled egg on the edge of each plate and scatter shiso over the whole dish. 5. Season at the table: Just before eating, drizzle each bowl in the order olive oil → mentsuyu, pouring in a circular motion. ▼ TIPS FOR COOKING ABROAD • Luncheon meat can be swapped for smoked duck breast, ham, or Spam-style luncheon meat. • Mentsuyu can be replaced with a mix of soy sauce, mirin, and dashi. • Shiso can be swapped for basil or mint for a different fresh note.
