White Sesame Seeds Directions 1. Cut the salmon and sprouts into bite-sized pieces. Cut the cream cheese into 1cm cubes. 2. Mix A and B in a bowl. [Bonito Marinated in Garlic and Soy Sauce] Ingredients 100g Seared Bonito White Sesame Seeds (as needed) Scallion (finely chopped) 1 Egg Yolk A 1 Tablespoon Soy Sauce 1 Tablespoon Mirin 1 Tablespoon Sake ½ Teaspoon Grated Garlic Directions 1. Place the bonito and A ingredients in a bowl and refrigerate for 30 minutes. 2. Place on a plate and top with the egg yolk. Sprinkle with green onions and sesame seeds. [Swordfish Stir-fried with Leeks and Bean Sprouts] Ingredients 2 slices swordfish 1 bunch chives (roughly sliced into 5cm pieces) 100g bean sprouts 1 clove garlic (minced) 1 clove ginger (minced) Potato starch to taste Red chili pepper (sliced) to taste White sesame seeds to taste Ingredients A 1 tablespoon soy sauce 1 teaspoon sake 1 teaspoon mirin Ingredients B 2 tablespoons soy sauce 1 tablespoon sake 1 teaspoon oyster sauce 1 teaspoon sugar Directions 1. Cut the swordfish into bite-sized pieces and marinate in Ingredient A for 10 minutes. Drain and coat with potato starch. 2. Heat oil in a frying pan and cook until cooked through (70%), then remove. 3. Add oil to the frying pan and sauté the garlic and ginger. ④ Once fragrant, stir-fry the red chili pepper, bean sprouts, and chives. Return the swordfish to the pan and add ingredients B, tossing to coat. ⑤ Place on a serving dish and sprinkle with sesame seeds. [Fried Tuna] Ingredients 150g tuna (sashimi) A pinch of salt Potato starch to taste Shiso leaves to taste Lemon or sudachi citrus juice 1.5 tablespoons soy sauce 1 teaspoon sake 1 tablespoon mirin 1/2 teaspoon grated ginger 1/2 teaspoon grated garlic Directions 1. Sprinkle salt on the tuna and let it sit for 5 minutes, then pat dry and cut into bite-sized pieces. Place the tuna and ingredients A in a bag and let it sit for 15 minutes. 2. Coat the tuna with potato starch and deep-fry in oil preheated to 170-180°C. ③ Place in a bowl and garnish with shiso leaves and sudachi citrus fruits. [Sanma Canned Rice] Ingredients 2 cups of rice 1 can of grilled sanma 1/2 pack of shimeji mushrooms 1/2 pack of maitake mushrooms 1/4 burdock root Ginger (shredded) to taste Green onion (finely chopped) to taste A 350ml of water 1 teaspoon of Japanese dashi stock 1 tablespoon of soy sauce 1 tablespoon of sake 1 tablespoon of mirin 1 teaspoon of salt Directions ① Wash the rice, soak in water for 30 minutes, and drain. ② Scrape the skin off the burdock root and cut it into thin strips. Split the mushrooms by hand. ③ Place the rice in a rice cooker and add ingredients A.
