Also known in some parts of Spain as "Atascaburras" or even "Ajoarriero." It is an emulsion of desalted cod with potato, garlic, and flavored milk. The texture achieved in the manner explained in the video is delicate yet characterful. Whether or not you add garlic will depend on your taste, as the oil will be flavored by both the garlic and the cod confit, so this level of consistency will depend on your personal taste. The emulsion of this Cod Brandada and its distinctive texture is achieved with circular movements with a wooden spoon, or alternatively, it can also be achieved in a mortar with a wooden pestle. Another quick way to make it is to blend it with a blender, although you wouldn't get the unique, authentic texture of a Brandade, but it would save time. Some people who make this Brandade substitute the milk with cream, but I consider the caloric content of this recipe excessive. As for the aroma of the milk in which the potatoes are cooked, we add it with the sprig of fresh rosemary, although it's true that if you don't like it, you can omit it. This Cod Brandade is great for dipping toast, rosquilletas, breadsticks, or breadsticks, or you can also use it to stuff piquillo peppers, vol-au-vents, etc. It's a very practical recipe since you can make it in advance, let it rest in the refrigerator for a few days. It's even tastier as the flavor of everything settles, and it's best served cold.
