I’ve Never Seen Bread Pudding Done This Way Savoury Curry Bake

This is something I genuinely haven’t seen done before. A savoury bread pudding built like an Indian curry bake — not sweet, not dessert, and not a twist on something traditional. Instead of sugar and spice, this uses a proper spiced onion-tomato base, tender cooked chicken, and a rich evaporated-milk custard poured over a deep bed of bread. Everything bakes together into a sliceable, savoury pudding that sits somewhere between a curry, a bake, and old-school British comfort food. This isn’t a recipe I copied or adapted — it’s an original idea that came from asking a simple question: What if bread pudding was treated like a curry instead of a dessert? If you’ve got leftover bread and chicken and want something completely different, this one’s worth trying. It’s comforting, bold, budget-friendly, and surprisingly cohesive.
