Marinated mackerel For me, this is one of the most delicious ways to cook mackerel at home. The fish turns out to be very tender, slightly salted, juicy and literally melts in your mouth. In this video I show absolutely all the nuances - from choosing fish to the right salting and even baked potatoes, which I most often cook with this mackerel. Ingredients freshly frozen mackerel - 2 pcs. water - 1 l salt - 100 g sugar - 30 g onion - 1 pc. celery stalk - 1 pc. (optional) bay leaf - 2 pcs. peppercorns - 10 pcs. allspice - 5 pcs. Preparation 1. Pour water into a saucepan. 2. Add salt, sugar, chopped onion, bay leaf, peppercorns, allspice and, if desired, celery stalk. 3. Bring to a boil and cook for about 5-7 minutes so that the spices fully release their aroma. 4. Cool the brine completely. 5. In the meantime, prepare the mackerel. Remove the head, fins, entrails and be sure to clean the black film inside well. Cut into pieces of about 2-2.5 cm. 💡 My advice It is most convenient to work with semi-thawed mackerel. It cuts much better, does not spread, and the black film is removed in just a few seconds. I also recommend using a very sharp knife. 6. Transfer the fish to a jar or any glass or enamel container. 7. Pour in completely cooled brine. 8. Cover with a lid and put in the refrigerator for about 24 hours. After that, the mackerel is ready. Important nuances ✔️ Do not pour hot brine over the fish. ✔️ Do not reduce the cooling time. ✔️ The best taste is revealed after about a day. ✔️ Do not keep the fish in brine for too long. About salt In the video I show you exactly what kind of salt I use. This recipe has been tested many times with it and the mackerel turns out to be very tender and slightly salty. Since different manufacturers may have different grinding and salt characteristics, the final taste may differ slightly. If you are cooking for the first time, I recommend sticking to these proportions. 🥔 In the same video, I also show you how to cook my favorite baked potatoes with a crispy crust, which I often cook with this mackerel.
