[Rekimeshi], or "Historical Recreation Meals," recreates historical food cultures in the modern age. Today, we've recreated the meals of the outlaws who flew the skull and crossbones flag in the Caribbean Sea—the "pirates." What kind of meals did they eat to survive the harsh conditions at sea and at bases like Tortuga Island? We'll show you a salad made by heartily mixing ingredients stolen from plundered ships and hardtack preserved food from the ship's hold, heavily seasoned with black pepper to mask the smell, and a high-calorie meal of hardtack soaked in the fat of smoked meat—a staple of pirates. We'll also show you a soul food still loved along the Caribbean coast today: pig's trotters marinated in lime and green chilies.
