FUNCTIONAL WHITE CHOCOLATE BAR Dairy-free, sugar-free, and plant-based Traditional white chocolate is made primarily with cocoa butter, sugar, and milk powder. This recipe took a different approach: to create a functional, plant-based adaptation, without milk and sugar, while maintaining cocoa butter as the base of the formulation. More than just replacing ingredients, the goal was to understand the function of each component and develop a bar with good structure, a pleasant texture, and a flavor surprisingly close to the sensory experience of traditional white chocolate. During testing, aspects such as creaminess, stability, melting, and the behavior of cocoa butter during storage were evaluated. The result was a handcrafted bar, developed with ingredients chosen not only for their flavor but also for their function in the recipe. ──────────────────── ABOUT ME For those who don't know me, I'm Alê Ninomia.
