Making 1990’s Harrod’s Scones & Lemon Curd

Join me live as I make Harrod’s Golden Raisin scones from a 1990’s cookbook and lemon curd I make in the tea house. Harrods Golden Raisin Scones: From Afternoon Tea Serenade, 1997 Makes about 12 scones 3 cups all purpose flour (unbleached) 2 tablespoons baking powder 6 tablespoons cold butter, cut into small pieces 6 tablespoons sugar 1/2 cup golden raisins 1 cup milk 1. Preheat the oven to 400F. 2. Stir the flour & baking powder together in a medium bowl with a wire whisk. 3. Cut into small pieces butter with your fingers until the mixture looks like a coarse meal. 4. Stir in the sugar and raisins. 5. Stir in the milk to make a firm dough. 6. Turn dough out onto a floured work surface and roll out to about 1 inch thick. Cut into about 12 rounds with a round cutter. 7. Place the scones onto a baking sheet, about 1 inch apart, brush with milk and bake 15-20 or until lightly golden. Serve warm! Enjoy! 😊 Lemon Curd: This is the lemon curd I make for the tea house. 2.25 cups lemon juice Zest of 3 lemons 2.25 cups sugar 6 eggs 3 egg yolks 1. Place juice in à large saucepan on the stove. 2. In a mefium bowl, rub the lemon zest into the sugar. Pour into the lemon juice. 3. In à large bowl, whidk together the eggs and yolks. 4. Heat the lemon juice mixture and stir until the sugar dissolves. 5. Piur the lemon juice mixture into the egg mixture shd whisk. Pour this back into the saucepan on the stove and cook, constantly whisking, until thickened. 6. Over à large bowl fitted with a fine mesh strainer, pour the lemon curd over it and strain it.
