可可古早/棉花蛋糕的成功秘诀 不开裂不回缩 口感超细腻绵软 Cocoa Cotton Sponge Cake
本期视频分享一款口感非常细腻湿润的蛋糕,可可棉花蛋糕/古早蛋糕。6寸的蛋糕尺寸比传统方形古早蛋糕更小,也不要特意买模具,使用普通6寸蛋糕模具即可制作。这款蛋糕采用烫面法制作,用70-75°C左右的热油来把面粉烫一下,从而让蛋糕吸水性更强更湿润。注意油温不宜过高或过低,过高会导致蛋糕塌腰,过低则达不到烫面的效果。烤制过程我们采用水浴法,使蛋糕有半蒸半烤的效果,不仅可以防止蛋糕开裂,也能让蛋糕口感更湿润。这款蛋糕可以趁热食用,但是放凉或冷藏后食用,更能突出它浓郁的可可味和香甜味。 🔔欢迎订阅我的频道Subscribe to my channel: http://bit.ly/2GNUdtz ■食谱(6寸蛋糕一个) 低筋面粉 50g 油,任何味道不重的油如玉米油、色拉油等 40g 可可粉,无糖 10g 热水,能化开可可粉即可,温度没有具体要求 20g 牛奶 35g 鸡蛋,带壳60g左右 3个 细砂糖 50g 白醋 5g 模具:6寸圆形活底模具(底部垫烘焙纸,外面包两层锡纸), 或6寸固底模具(底部和侧面垫烘焙纸,外面不需要包锡纸) 烤制:水浴法,外面烤盘中加冷水。150°C/300°F烤约70分钟。具体温度时间根据自己烤箱进行调整。 ■ Recipe(makes 1 6-inch cake) Cake flour 50g Oil, flavorless 40g Cocoa Powder, unsweetened 10g Hot water 20g Milk 35g 3 Eggs, 60g ea. with shell. Granulated sugar 50g Vinegar 5g Cake Pan: 6 inch pan with removable bottom(line the bottom with parchment paper, wrap the outside with 2 layers of aluminum foil) or 6 inch pan with fixed bottom(line the bottom and the side with parchment paper) Bake: Bake with water bath(cold water), 150°C/300°F for 70 minutes.
