Ingredients: FOR THE WALNUT DOUGH - 500g 0000 flour. 1 tsp cocoa powder (only for the walnut ones). 250g butter. 200g sugar. 1 tsp vanilla essence. 2 eggs. 200g walnuts. FOR THE WALNUT FILLING - 1 kg dulce de leche. FOR THE PISTACHIO DOUGH - 500g 0000 flour. 250g butter. 200g sugar. 1 teaspoon vanilla essence. 2 eggs. 200 g pistachios. FOR THE PISTACHIO FILLING - 200 g white chocolate. 100 g heavy cream. 100 g chopped pistachios. Process: 1. For the dough, sand the flour, cocoa (only for walnuts), butter, and nuts. 2. Add the sugar, eggs, and essence. 3. Form a dough, wrap in plastic wrap, and refrigerate for 30 minutes. 4. Roll out the dough and cut into small rounds with a cookie cutter. 5. Bake at 170°C for 20-25 minutes. 6. For the ganache, bring the heavy cream to a boil in a saucepan. 7. Once it reaches this point, add the chocolate in small pieces, melt it with a spatula, and finally add the chopped pistachios. 8. Wait for it to cool, then refrigerate for approximately 60 minutes. 9. Fill the tops with dulce de leche and pistachio ganache.
