Perfect for morning toast or as an accompaniment to evening meals. ⸻ 🍞 Ingredients: • 250g all-purpose flour • 250g T80 flour • 370g water • 90g sourdough starter (whole wheat here) • 10g fleur de sel + 20g water to dilute it ⸻ 🌡️ Fermentation conditions (autumn): • Outside temperature: 18°C • Room temperature: 20°C • Flour temperature: 20°C • Base temperature used: 68°C 👉 Desired water temperature for mixing: 28°C 💡 Tip: If you are making this recipe in warm weather (summer, +25°C), remember to: • Reduce the time between folds • Shorten the first rise before refrigerating • Lower the base temperature to 60/62°C to calculate the water temperature. ⸻ 📣 Need help?
