Today, we are making the ultimate easy blueberry muffins recipe with absolutely NO MIXER required! We’re mixing everything by hand to ensure a perfectly light and airy texture. These are truly the fluffiest blueberry muffins you will ever make! Packed with fresh blueberries, fragrant lemon zest, and topped with a buttery brown sugar streusel, these muffins are just perfect! In this video, I’ll show you the "secret" to getting that perfect rise and how to make your own buttermilk at home in just 10 minutes. 🧁 Recipe. Muffin Batter: • ¾ cup Sugar (150g). • 1 tsp Lemon Zest. • 2 Large Eggs. • 1/4 tsp Salt. • 1 tsp Vanilla Extract. • ½ cup Melted butter (110g). • ¼ cup Plain yogurt (65g). • 1 cup Buttermilk (240ml) (or 1 cup milk + 1 tbsp lemon juice). • 2 tbsp Lemon Juice. • 2 ½ cups All-purpose flour (315g). • 1 tbsp Baking Powder. • 1/2 tsp Baking Soda. • 1 ½ cups Fresh blueberries (220g). • 1 tbsp Cornstarch (to coat berries). For the Crunchy Streusel: • ½ cup All-purpose flour (60g). • ¼ cup Brown sugar (50g). • 3 tbsp Cold butter (40g). Optional Blueberry Glaze: • ¾ cup Powdered sugar (100g). • 1 tsp Intense blueberry juice (from 5-7 mashed, microwaved berries). • 2 tsp Lemon juice. Brief Cooking Process. The Streusel: Combine flour, brown sugar, and cold butter into fine crumbs. Chill in the fridge. The Wet Base: Rub lemon zest into the white sugar until fragrant. Whisk in eggs, salt, vanilla, melted butter, yogurt, buttermilk, and lemon juice until smooth. The Secret Quick-Mix: Sift in flour, baking powder, and baking soda. Mix quickly and briefly—over-mixing destroys the airy texture! Fold in the blueberries tossed in cornstarch. Bake Big: Fill paper muffin liners 2/3 full, top generously with chilled streusel, and bake at 392°F (200°C) for 5 minutes, then lower to 350°F (180°C) for 20-25 minutes. Glaze & Serve: Once completely cool, whisk the powdered sugar with the fresh warm blueberry and lemon juice filtrate to create a vivid purple glaze. Drizzle and enjoy!
