Ingredients Whole Wheat (King Arthur) 300g Water 210ml Orange Juice 30ml Olive Oil 15ml Yeast 5g Salt 5g Mixing only water, orange juice, and whole wheat flour and autolyzing for 30 minutes allows the bread to rise better and results in a soft texture after baking. The acidity and sugar in the orange juice eliminate the characteristic aroma of whole wheat and aid in stable fermentation. Stop the first fermentation when the dough has risen to about 1.5 to 2 times its original size. When adding nuts, spread the dough out wide and lightly brush it with water before adding them. If you are not adding nuts, simply shape the dough into a round shape immediately. * For the second fermentation, do not wait too long; bake immediately without waiting for the dough to double in size. For a steam air fryer, preheat for 5 minutes, bake for 10 minutes, and then bake for 15–20 minutes on convection. For a standard air fryer, bake at 180–190 degrees for about 25 minutes.
