Having a scoby hotel is important because contamination or mold problems can occur in your scoby, forcing you to interrupt your kombucha production because you don't have a backup kombucha scoby. And nobody wants to be without their daily dose of kombucha, right? I, at least, don't want to. I've already accidentally killed a kombucha SCOBY, and I can assure you it was quite annoying not having my daily fermented tea to drink. Since I didn't have a SCOBY hotel, I had to resort to a SCOBY donation to resume my homemade kombucha production. Therefore, in today's video, in addition to teaching you how to make a SCOBY hotel, I'll also show you how to donate SCOBYs.
