Jalapeño Popper Potato Casserole — creamy, cheesy, bacon-loaded comfort food on the table in about an hour. I saw this one over on the Allrecipes website and couldn't stop thinking about it — that popular jalapeño popper appetizer, married up with a big pan of potatoes. It's creamy from the pimento cheese, smoky from the bacon, and you get just enough jalapeño coming through to know it's there. I made a few little changes to suit our house, and I'd make it again in a heartbeat.
