Chamomile Jelly (from creativecanning.com): 4 cups chamomile tea (2 cups fresh chamomile blossoms steeped in 4 cups water), strained 5 cups organic cane sugar 6 T powdered pectin 1/4 cup fresh lemon juice Pour the chamomile tea and lemon juice into a large pot, and bring to a boil. Whisk in the pectin until completely dissolved and boil for one minute. Add all the sugar, then stir to dissolve. Return to a full boil, and cook for exactly one minute (mixture will be thin). Ladle into hot jars. Wipe rims and top with boiled lids. Screw on lids (fingertip tightness) and bake jars at 225 for 45 mins. Note: at first the jelly will seem very watery, but it sets up beautifully once completely cooled. Peppermint Tea Concentrate: 10 cups water 6 cups mint leaves 4 cups organic cane sugar 3 cups honey (could also do 8 cups sugar and omit the honey) lemon juice Add water, mint leaves, sugar, and honey to a large pot. Heat until sugar is dissolved and mixture is hot, but not boiling. Cover the pot with a lid and let steep for as long as possible (ideally 4-8 hours). Strain and add about 1/4 cup lemon juice. If you're oven canning the concentrate, heat the mixture again until hot, but not boiling. Ladle into prepared jars, leaving 1 inch headspace. Wipe the rims, and place hot lids on top. Screw to fingertip tightness. Bake jars at 225 for 45 mins. Herbal Salts: Mix equal parts dried (or fresh - see video for details) herbs and coarsely ground salt. Herb Infused Oil: Sterilize jars and dry completely. Add 1 3/4 cup avocado (or olive) oil and approximately 1 cup dried herbs, then cap. Label with date and ingredients. Store in a dark cabinet for two weeks. Strain the oils, then refrigerate for longest shelf life. Use within 6 months, checking for signs of spoiling. Some links are affiliate links.
