Guys, in the new episode of Mocho Gotta Go, I'm finally taking you to try a barbecue, more precisely, BARK BARBECUE. Born in 2020 by the genius pitmaster Ruben Santana, after years of pop-ups all over NYC, it's finally found a permanent home at Time Out Market. For the first time, I'm trying a BBQ that's a little different than usual, a Texas Style with Caribbean inspirations 🔥 Yeah, but Mocho, what did you get? • The Ribs: Beef ribs cooked incredibly well and pork ribs with a devastating bark • Smoked Carnitas: The dish of the day. Fatty, spicy, and sweet, with a sauce that paired perfectly. • Mac and Cheese: Super creamy and definitely challenging, greasy even for me 😂 • The Sandwiches: This is where you fly. The Tres Golpes (pulled pork, fried cheese, and plantains) is an explosion of flavor, while I found the Sofrito Smoked Fried Chicken to be a stroke of genius: smoked first and fried afterward to maintain a perfect bark. An exotic, new flavor, decidedly different from classic BBQ, highly recommended. Watch out, the series is about to end...
