Christopher Columbus was one of the first Europeans to encounter them (in the Caribbean), and he called them "peppers" because of their flavor, similar to the black pepper used in Europe, of the Piper genus. This was one of the reasons for his voyages: to find a route west to reach the Indies and their coveted spices, particularly pepper. Unlike other edible plants from the Americas, which took decades to be accepted by Europeans, chili peppers spread rapidly worldwide after their introduction to Spain by Columbus in 1493. Chili peppers were usefully integrated into Spanish and other European cuisines (especially Italian), largely for sausages, since according to 15th-century chronicles and texts, these previously used only peppers and vinegar to preserve the fillings (similar to the sausages made in various regions and countries). It is common, but not widespread, for chili peppers in Spain to be called "pimento" (pepper) and for the hottest varieties to be called "guindilla" (chili). Over the next two hundred years, its use would revolutionize the gastronomy of Mediterranean peoples, also transforming the cuisine of China, India, and Indonesia. Such was its acclimatization that in many parts of Africa and India, the plants are believed to be native to those regions. The cultivation of chili peppers, a plant native to Central and South America, dates back more than 6,000 years, even predating the invention of pottery, according to a study published in the journal Science. An international team of researchers traced the long history of cultivated peppers by analyzing starch microfossils found on stones used to grind the seeds of this plant.
