Healthy Flourless & Sugar-Free Brownies Ingredients (16 × 16 cm / 6 × 6 inch pan) For the batter: • 2 ripe bananas • 2 eggs • 2 tbsp cocoa powder (15 g) • Pinch of salt • 1 tsp baking powder (5 g) • 1 tbsp pumpkin seeds (10 g) • 2 tbsp walnuts, chopped (20 g) • 5 tbsp Greek yogurt or sour cream (75 g) • 2 tbsp raisins (20 g) • 1 apple (120 g) • 1 tsp ground cinnamon (3 g, optional) • 1 cup rolled oats (90 g) For the chocolate topping: • 3 oz (80 g) sugar-free dark chocolate • 3 tbsp hot milk (45 ml) For decoration: • Walnuts Instructions 1. Mash the bananas into a smooth puree. 2. Add the eggs and whisk until combined. 3. Add the cocoa powder, salt, and baking powder. Mix well. 4. Stir in the pumpkin seeds, chopped walnuts, and Greek yogurt. 5. Soak the raisins in boiling water for 10 minutes. 6. Toast the rolled oats in a dry skillet over medium heat for 4–5 minutes, then let them cool. 7. Peel and finely grate the apple. 8. Add the grated apple, drained raisins, and cinnamon to the batter. 9. Add the toasted oats and mix until fully combined. 10. Transfer the batter to a prepared baking pan and spread evenly. 11. Bake at 180°C (356°F) for 30–35 minutes. 12. Allow the brownie to cool completely. Chocolate Topping 1. Pour the hot milk over the dark chocolate. 2. Stir until smooth. If needed, microwave for 20–30 seconds and stir again. 3. Spread the topping evenly over the cooled brownie. 4. Sprinkle with walnuts. 5. Refrigerate until the chocolate topping is fully set. 6. Slice into portions and serve.
