Stir in chicken, tomato sauce, olives, 1/2c chicken broth, 1tsp salt and 2tsp chili powder. Bring remaining chicken broth to a boil; add remaining salt and vegetable oil. Mix cornmeal with cold water; gradually stir into boiling broth. Cook over low heat, stirring constantly, until mixture is quite thick. Pour half of mixture into oiled 2 quart casserole dish. Cover with chicken mixture; top with remaining corn meal mixture. Bake at 350 for 45 minutes. *to prepare cooked chicken: in saucepan, cover 3 chicken backs, split, and 3 necks with 3c cold water; toss in 1 carrot, sliced, 1 celery stalk, sliced, and 1tsp salt. Simmer, covered, until chicken is tender. Cool then remove chicken from bones (you should have about 1 1/2 cups). Use 2 1/2c broth for Tamale Pie; refrigerate or freeze remainder to use for other recipes. DRUMSTICKS ITALIAN STYLE 6 chicken drumsticks 6 chicken thighs 1/4c vegetable oil salt and pepper 1 onion, sliced 1 bay leaf 1/2tsp oregano 1 - 6oz can tomato paste 1c water 1c dry macaroni, cooked and drained In skillet brown chicken in vegetable oil; pour off excess fat. Sprinkle with salt and pepper; add onion, bay leaf, and oregano. Mix tomato paste, water, and salt. Pour over chicken; simmer, covered, 30 minutes; remove bay leaf. Stir in cooked macaroni and cook 10 minutes more. Makes 6 servings. OUR MOST ASKED FOR SPAGHETTI AND MEAT SAUCE RECIPE 1lb ground beef 3/4 cup chopped onion 1 clove garlic, minced 3 cans (8oz each) tomato sauce with mushrooms (I just added canned mushrooms to plain sauce) 1c water 2tsp Worcestershire sauce 1tsp salt 1/2tsp basil 1/2tsp oregano 8oz spaghetti In skillet brown beef with onion and garlic; pour off fat. Stir in sauce, water, Worcestershire sauce, salt, basil, and oregano. Simmer 45 to 50 minutes. Meanwhile cook spaghetti; drain and keep hot. Serve meat sauce over spaghetti.
