This 1960s Cookbook Is Full of Forgotten Budget Dinners!
Today I'm cooking up some forgotten budget dinners from a 1960s cookbook that was generously sent to me by a viewer. Follow along as I try some old fashioned meals. Let's Start to Cook (1966) ------------------------------ PATREON: / cookingallthebooks INSTAGRAM: instagram.com/_cookingthebooks_ FACEBOOK: / cookingallthebooks WEBSITE: https://www.cookingthebooks.net/ ------------------------------ SKILLET MACARONI AND CHEESE (pg 167) 1/2c butter 8oz elbow macaroni 1/2c chopped onion 1 tsp salt 1/4 tsp pepper 1/8 tsp dried oregano 1/4 tsp dry mustard 2c water 1 1/2 Tbsp flour 1 - 14.5 oz can evaporated milk 8oz sharp Cheddar cheese, shredded 1 Tbsp instant minced parsley Turn on the electric skillet to 200 degrees F (or place a regular skillet on the stovetop over medium heat). Melt the butter in the skillet and add the uncooked macaroni, onion, salt, pepper, oregano, and dry mustard. Turn up the heat and cook, stirring occasionally, for 5 to 7 minutes or until the onion looks clear. Add the eater and bring to a boil. Cover the macaroni and simmer for 6 to 12 minutes or until the macaroni is tender. Test for doneness by taking a bite. Sprinkle the flour over the macaroni mixture and stir to mix well. Stir in the evaporated milk and shredded cheese. Simmer the mixture 5 minutes longer or until the cheese completely melts. Stir occasionally while it cooks. Sprinkle with parsley and serve. CREAMED CHICKEN (pg 148) 1 can condensed cream of chicken soup 1/3c chicken broth, canned or homemade 2c diced cooked chicken or turkey 1/4 tsp of salt Mix the soup and broth in a saucepan. Add the chicken and salt. Heat the mixture until it is piping hot. Spoon the hot mixture over toast or eat as a sandwich. SAUSAGE-CORN BAKE (pg 139) 4 medium potatoes, peeled and thinly sliced 2 medium onions, peeled and thinly sliced 1lb bulk pork sausage 1 can of cream-style corn 8oz tomato sauce salt & pepper Peel, wash, and slice the potatoes and onions. Start heating the oven to 350 degrees F. Grease a 2 quart casserole. Shape the sausage into 8 thin patties. Place in a heavy skillet and cook over medium heat to brown on both sides turning once. While sausage cooks, put a layer of potatoes, onions, corn and tomato sauce, using half of each, in the casserole. Then add a second layer of each (the potatoes, onions, corn and tomato sauce). Sprinkle each layer with salt and pepper. Top with sausage patties, drained. Cover the casserole and bake 45 minutes. Uncover and bake 15 minute longer.
