Today I'm delving into my vintage cookbooks for some recipes that save you money! These 1940s Budget Dinners come to us from the Better Homes and Gardens 1949 edition cookbook. Frizzle meat and cook green pepper in butter; add flour and blend; add milk; cook until thick, stirring constantly; add 3/4c cheese. Combine sauce and macaroni, pour into greased casserole, top with remaining cheese. Bake in a 350 degree oven for 30 to 40 minutes. CHICKEN HASH (ch 13, pg 3) 3 raw potatoes 1 medium sized onion 1 green pepper 2Tbsp oil 1/2c drained, canned tomatoes 1/2c chicken stock salt and pepper 1 1/2c diced cooked chicken Put potatoes, onion, and green pepper through food chopper using coarse blade. Brown in hot fat. Add tomatoes, chicken stock, and seasonings (be sure to scrape the browned bits up from the bottom of the pan when you add the liquid!); cook covered for 20 minutes. Add chicken and continue simmering for 20 minutes. Turkey may be used in place of chicken. CORN CHOWDER (ch 17, pg 5) 2oz salt pork, diced (I used bacon/bacon grease) 1 small onion, sliced 2 1/2c canned corn 2c diced potatoes 1 1/2c fresh or canned tomatoes 1Tbsp sugar 1 tsp salt 1/2tsp pepper 4c boiling water 1c hot milk Crackers Fry salt pork golden brown; add onion and cook without browning for 5 minutes. Add vegetables in layers; sprinkle with sugar and seasonings; add water and cook slowly until potatoes are tender (I simmered this for about 15 minutes). Remove from heat and slowly stir in milk.
